Philosophy
The whisk moving through the bowl. A drop falling from the tines. The faint sound of the bowl set down.
Each of them is flavour, and fragrance, and a signal that the body and mind are beginning to settle. Not something to finish quickly — something to listen to.
KANNE is written with the characters for “the sound of the divine.” It is the name we gave to that quiet, the one that lives inside a single bowl of matcha.
茶筅が茶碗をめぐる音。穂先から雫が落ちる音。碗を置くときの、かすかな音。
その一つひとつが味であり、香りであり、心と体がゆっくり整っていく合図になる。急いで飲み干すためのものではなく、聞くようにして味わうもの。
KANNE（かんね）は「神の音」と書きます。一杯の抹茶に宿る、その静けさにつけた名前です。
